Misc. Hi Meg - what you describe sounds very much like a sponge cake but my understanding of Mazurek is a kind of lattice pastry filled with jam or other filling. I have checked a book i have which contains Polish recipes and just in case that was wrong i also checked the net - i know this doesn't help you in your search for the recipe you need and i don't want to contradict you but maybe you need to check that you got the correct name of the cake? It may be called something else entirely and maybe that's why you didn't find a suitable recipe when you did your search?
