Mazurek Recipes and 6 Toppings for Mazurek

Royal Mazurek
1 cup butter
6 egg yolks
1 cup sugar
1/4 cup almonds, chopped fine
1 1/2 cups flour
1/4 tsp salt
Cream butter. Sift flour, sugar and salt. Add alternately one egg yolk and a little flour until all has been used. Add almonds. Bake in a 17x11 pan for 30 min at 350.
Chocolate Mazurek
1 cup sugar
4 egg yolks
4 oz. baking chocolate
4 tsp butter
1 tsp vanilla
1 cup dry bread crumbs
4 egg whites, beaten
Cream sugar and butter. Add beaten egg yolks. Add chocolate, vanilla and bread crumbs. Fold in egg whites. Mix well and spread one half inch thickness on buttered and bread crumb dusted pan. Bake at 350 for 15 min. Turn off heat and leave in oven for 10 min.
Mazurek

3 Tbsp cream
2 cups flour
1 egg
1/4 tsp salt
Sift dry ingredients. Cut butter into flour with knife until crumbly. Mix beaten egg with cream and add to flour. Mix lightly with hand and spread on buttered cookie sheet. Bake for 20 min in 350 oven. Remove from oven and quickly cover with one of a variety of toppings. Bake 20 min longer. When cool, decorate with lucre, maraschino cherries, angelica, chopped candied orange peel, coconut, etc. Cut into small 1x2 inch pieces. This is a rich and delicious pastry.
Toppings for Mazurek:
Mixed Fruits
1/2 lb. EACH raisins, dates, figs
1/4 lb nutmeats
Juice of 1 lemon and 1 orange
1 cup sugar
2 eggs
Chop fruits and nuts. Do not put through food grinder. Add sugar, eggs and flavoring and mix well. Spread on baked pastry and return to oven 20 min.
Citrus Fruits
4 oranges
1 lemon
1/2 cup water
1 1/2 cups sugar
Remove seeds from fruit and grate the whole fruit. Bring sugar and water to boiling point. Add grated fruit and cook carefully until it becomes thick. Remove from fire, stir until cool. Cover the pastry baked for 30 min. in 350 oven. Set in cold place to cool.
Apples
2 cups sugar
1 cup water
12 slices apples
Grated rind of lemon
Boil sugar and water to thick syrup. Add apple slices and boil slowly until glossy. Add grated rind. Cool and spread on partially baked pastry. Return pastry to oven for 20 min.
Dates
6 egg whites
1 lb. powdered sugar
1/2 lb. EACH chopped almonds, dates sliced lengthwise, grated baking chocolate
Beat egg whites until stiff and slowly add the sugar. Beat for half hour. Add other ingredients, mix well and spread on baked pastry. Return to oven 20 min.
Lemon
1 cup sugar
1 egg
1/2 lb. chopped almonds
Juice and rind of 1 lemon
Beat sugar, egg and flavoring until thick. Add almonds and spread on baked pastry. Return to oven for 10 min.
Chocolate
12 cooked egg yolks
8 oz. baking chocolate
2 cups sugar
1/2 lb. almonds, chopped
1 egg
1 tsp vanilla
Rub cooked yolks through sieve. Beat egg with sugar. Add melted chocolate and egg yolks. Add vanilla and chopped almonds and spread on baked pastry.
