Um, I hate to be the voice of dissent but, there IS a dish called Pollo Fundido. I've had it at several Mexican Restaurants, the best being Garcia's in Albany, New York. It's highly-seasoned chicken chunks wrapped in tortilla's and fried, then covered in cheese and melted. Regrettably, I don't have a recipe for it but, it is a real dish.
