Have been using a stainless steel appler corer forever to do the trick. I push the corer through the potato center up about 3/4 of the way through the potato. Then cut around the potato, down to the corer in a circle, about at the center of the potato. . Pull away the half of the potato that has been cut away. Gently remove the mushroom shaped top and the stem, which is inside the corer shaft. Might need further explaining but works like a charm. They look great around a roast.
