Hi Bill, I know that traditionally skirt steak is used for fajitas, but I use this marinade for similar cuts of beef and lean steaks. It's delicious. 2/3 cup olive oil, 1/4 cup red wine vinegar, 1 tsp. oregano, 3 cloves garlic finely chopped, 1 tsp. salt, 1/4 tsp freshly ground pepper. I maranate for at least 3 hours then grill or broil.
