KIWI LOAF
1 1/2 cups flour
1/2 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup peeled and chopped kiwi fruit
2 tablespoons lemon juice
1 egg, beaten
1/2 cup vegetable oil
Preheat oven to 350 degrees F. Coat a 9x5-inch loaf pan with non-stick cooking spray.
Mix together flour, sugar, baking powder, baking soda and salt; set aside.
Combine remaining ingredients. Combine mixtures until ingredients are moistened. Spoon into prepared pan.
Bake at 350 degrees F for one hour or until done.
Makes 1 loaf
