re: Sandwich bread

If you want a sandwich bread that can be sliced thinly, pain de mie is what you're looking for. It's generally baked in a special, lidded pan, to keep it from rising, and has butter kneaded in, which is tricky but do-able. I'll post the recipe if you're interested.
