ISO: Sandwich Bread (not food processor or bread machine)

I live in a place where I cannot buy sandwich bread. I need a recipe for sandwich bread by hand that makes a light soft loaf like packaged loaf sandwich bread in america. All the recipes that I have tried so far have a crust that is too thick and too hard and/or the bread does not hold together when I slice it thin enough for sandwiches. I can't buy bread flour here; they only sell one type of flour. Thank you to anybody who can give me a recipe or tell me what I am doing wrong.
