RE: soggy pie crusts

Here are some tips to prevent soggy bottom crusts:

Put the lower crust in the oven for 5-10 minutes and bake while you are rolling out the top crust. Then put in the filling and put on the top crust. The bottom crust will not get soggy. This is a very important step!

Also, before putting in the apple filling, make sure you drain out all the excess water that has accumulated at the bottom of the bowl/container.

You can also brush the top surface of the bottom crust with an egg wash which helps seal it somewhat.

Lastly, many people precook the apple filling in a pan on the stovetop. This gets rid of the excess water.
