Page, I have tons of mint also! Try chopped in salads, it is really good with cucumber. Pineapple pasta salad is also good eith mint in it. How about mint jelly!! Now that I think about it, I have a recipe for lemonade jelly that I think would be good with mint in it. Anyway, if you think of any more minty ideas let me know.
