Recipe: 30-Minute Ham Chowder (using corn, cheese and evaporated milk, 1960's)
Soups30-MINUTE HAM CHOWDER
1 cup cooked diced ham
1/2 cup chopped onion
3 tablespoons butter
1 tablespoon flour
2 cups (1 lb. 1 oz. can) cream style corn
1 2/3 cups (12 oz. can) undiluted Carnation Evaporated Milk
1 cup water
1 vegetable bouillon cube
1/3 cup shredded process American cheese (plus additional for garnish, if desired)
1 tablespoon chopped fresh parsley
1/8 teaspoon ground cayenne pepper
Saute ham and onion in butter until onion is tender. Stir in flour. Add remaining ingredients. Blend well. Heat mixture to boiling, stirring constantly. Reduce heat and simmer 20 minutes, stirring occasionally.
Garnish with additional shredded cheese, if desired. Serve immediately.
Makes about 6 cups
