CANDIED BANANA SQUASH
1 (2 to 2 1/2 lb) banana squash
1/4 cup granulated sugar
1/4 cup packed brown sugar
4 tbsp butter or margarine
1/2 tsp salt
Scrub squash, cut in serving size pieces, removing seeds and membrane. Arrange squash, skin side down, in large shallow baking pan.
In saucepan, combine sugars, butter, salt and dash pepper; cook and stir till sugars dissolves. Spoon sugar mixture into squash cavities. Cover with foil.
Bake at 325 degrees F until squash is tender, about 60-70 minutes, spooning sauce over once or twice.
Makes 8-10 servings
