Regarding uncooked eggs in recipes...

As a rule of thumb, substitute pasturized egg products
(like egg beaters or other egg substitutes) for
raw eggs in recipes and substitute just whites dried
egg whites for egg whites used in recipes. If a recipe
looks like it just won't work with substitutions, it's
best to skip it altogether.
