Recipe: Moroccan-Style Beef Kebabs with Couscous (Weight Watchers)

1 4 cup reduced-sodium beef broth
2 tablespoons frozen cranberry juice concentrate, thawed
1 teaspoon salt
1 2 teaspoon saffron threads, crushed
1 pound boneless sirloin steak, trimmed and cut into 1-inch chunks
8 cremini mushrooms
1 large red bell pepper, cut into 12 pieces
1 onion, cut into 8 wedges
1 large zucchini, cut into 12 chunks
4 cups hot cooked whole-wheat couscous (for serving)
Spray the rack of a broiler pan with nonstick spray and preheat the broiler.
Meanwhile, combine the broth, cranberry juice concentrate, salt, and saffron in a small bowl; set aside.
Alternately skewer the beef and vegetables on 4 (12-inch) metal skewers; brush with half of the broth mixture.
Place the skewers on the broiler rack and broil 5-inches from the heat about 4 minutes. Turn and brush with the remaining broth mixture. Broil until the beef is cooked to medium doneness and the vegetables are tender, about 6 minutes.
Serve with the couscous.
