Another really easy way to have a fool-proof roast is: Smother the outside with Salt and Cracked pepper and rub in. Preheat the oven to 500 degrees. Put the roast in and cook 6 minutes per pound at 500 degrees and then turn the oven off.
DO NOT OPEN THE OVEN DOOR ... NOT EVEN TO PEEK. When it's done the inside will be rare/medium rare and the outside crusty. It's wonderful!
