Recipe(tried): fool-proof roasts

I don't know if I am too later for you, but I just browsed throught the section and your post caught my eye. Years ago, I was taught by a Navy cook to freeze all my roasts and just take the frozen roast, put some fresh garlic schmeared all over the top, and pop it in the oven for EXACTLY 1 hour at 375 degrees. Again, do NOT open the door, do not even peek! Just before you want to serve it reheat the oven to 375 for 15 -20 minutes. Nice and rare/medium inside and crusty brown outside.
