Sausage storing info

Misc.

Hi there Pat..I got this information off of a meat information site...As I was researching I found much to my suprise smoked sausage doesn't last as long as I thought! It's because of the fat content...fatty foods go rancid much faster than less fatty ones. Anyways..hope this helps!STORING PORK

Like all meats, proper storage of pork is essential. Use safe preparation, cooking methods and refrigerate leftover cooled pork within an hour of cooking. After selecting your favorite cut of pork, immediately place the fresh meat in the coldest part of your refrigerator or freezer. To increase shelf life store the meat in freezer bags or heavy duty foil wrap. Most meats can be frozen for long periods, however flavour and nutritional value will deteriorate.
(The storage times are listed as follows...refrigerator life/freezer life)

Fresh roasts, chops/steaks 2-4 days / 8-10 months
ground pork 1-2 days / 1-3 months
sausage 2-3 days / 2-3 months
variety meat 1-2 days / 3-4 months
Processed sausage smoked 3-7 days / 1-2 months
sausage dry/semi dry 2-3 days / 1-2 months
