Recipe: Asian Zing Wings like Buffalo Wild Wings and Hooters

like Buffalo Wild Wings and Hooters
Preheat oven to 425 degrees F. Cover 2 baking sheets with heavy-duty aluminum file or a double-layer of regular-thickness foil; brush foil with vegetable oil.
Toss together to coat:
16 chicken wings (8 whole wings cut in half)
Salt and ground black pepper (to taste)
1/2 teaspoon ground cayenne pepper
Dash garlic powder
Add and toss to coat:
1 teaspoon rice wine
3 to 5 tablespoons flour (optional)
Place wings 1/4 to 1/2-inches apart on prepared baking sheets (don't allow to touch each other). Brush the wings all over with vegetable oil.
Bake for 25 minutes. Turn wings over and return to oven for 5 minutes or until done.
Place wings in a large mixing bowl. Pour Asian Zing Sauce (recipe follows) over wings and toss together or mix to coat. Place wings on a platter.
Garnish with:
1 green onion, chopped
Sesame seeds
ASIAN ZING SAUCE
Place in a small saucepan:
1 cup water
2 tablespoons rice wine
1 1/2 tablespoons soy sauce
1/2 tablespoons whole black peppercorns
3 garlic cloves, each smashed once with knife
Fresh ginger, cut in pieces (the same amount as the garlic)
1 handful coarsely chopped onion
1 green onion, halved
Handful small dried chile peppers
1 to 1 1/2 tablespoons molasses
Bring to boil; reduce heat to medium; cover and simmer 5-10 minutes. Strain and return the sauce to the pan. Turn heat to medium-high.
Add to the sauce in the pan and bring to a boil:
1 tablespoon rice vinegar
1 tablespoon chile garlic sauce
1 tablespoon oyster sauce
Add and stir until thickened:
Cornstarch water (amount not given - looks like about 1/2 to 1 tablespoon cornstarch mixed with 2 tablespoons cold water)
