Hi Regina! I was the pickiest eater in high school and a vegitarian so here's what I ususally did. Almost everything can be made ahead of time and frozen. We tend to do a lot of sandwiches because they're easy to put together in the morning. But if a few of these items were in the freezer already ... MUCH easier.

Burritos - bean burritos - take a can of whole pinto beans (cheaper, healthier and better than the pre-refried kind) and mash with chili powder, cumin, salt, hot pepper - whatever seasonings you/she likes. Roll up in a flour tortilla with a little cheese. Can throw in veggies, cooked chicken, spanish rice - whatever you have. Roll up in foil, put in a storage bag and pop in freezer. They're ready to go when you are. If you take out of freezer the night before and leave in fridge until she leaves, they should be defrosted by lunch.

Calzones - same basic idea as above. Use any pizza crust recipe and fill with whatever she likes: cheese, spinach or other veggies, meats - can even do ethnic versions: beans/salsa/cheese (mexican), potatoes/peas/curry (indian), spinach/pine nuts/feta (greek). Wrap in foil and freeze. I personally prefer reheating in an oven but the microwave will do in a pinch.

Dips: hummus and pitas, yogurt/cucumber/dill and veggies, fruit flavored yogurt and fresh fruit, etc. (This was huge when I was in school.)

Wraps: quite the trendy thing nowadays. Take your sandwich fillings and roll them up in a tortilla (have you seen all the funky colors they have now?), flatbread, lavash or a pita.

flatbread/foccacia/pizza - mini pizzas with whatever toppings she desires.

Pasta - leftover or made the night before. Baked ziti with mozzarella is particularly good the next day. Pasta salad was a good call too. Good way to use up the odds and ends that always seem to be in the fridge.

Salads - not only green but grain as well like tabbouli.

Does she like leftovers? I was thinking along the lines of a stuffed pepper or tomato, stew from the night before or even chili. Things that get better the next day. Or is that too much of a good thing? I was never big on leftovers for that reason. But maybe you could take part of a night's dinner - like roast chicken - and turn it into a chicken caesar burrito kind of thing for example with a tortilla, some lettce, a little parmesan and some bottled dressing. Pretty easy and definitely not a regular 'ol sandwich.
