Does she like pasta ?If she does you could try and pasta veggie salad with a zesty italian dressing.
that would be a oil- vingar based instead of doing the mayo or miracle whip based dressing .If you put the salad in a microwave -freezer container overnight it would be cold in morning.
You threw some blue ice packs into lunch cooler and it should stay cold for awhie until she eats it .That could be a option
