Hi Rhonda, here are some of my favorite veggie cookbooks:

My latest and favorite: The Complete Italian Vegetarian by Jack Bishop. It has great recipes, most of them quite simple, and wonderful pictures. I got it for a great price at BJ's, keep your eyes peeled for it.

Other tried and true ones I refer to often: Vegetables on the Side by Sallie Williams; The Occasional Vegetarian by Karen Lee (it's actually all vegetarian); and "Meatless Main Dishes" and "Vegetables" from the Time=Life Low Fat Cooking series (you might find these at your library). I also use the Moosewood cookbooks alot, and these are probably at your library so you can inspect before buying. Happy peeling and chopping!
