Hi Cynthia.. this recipe, over the years, has had other variations. This one is from Bill Randle's 1960's Ask Your Neighbor ~ Vol III cookbook. He was a radio/disk jockey in Cleveland, Ohio. If I find the other variations, I'll post those as well.
7-LAYER CASSEROLE
No precooking ~ just put in layers and pop into your oven.
1. 1 cup uncooked rice (as in minute rice) ~ washed & drained.
2. 1 cup canned whole kernel corn ~ drained.
3. Sprinkle with salt & pepper to your taste. Pour over 1 can tomato sauce (Hunt's was specified) (8 ounce size) and 1/2 cup water.
4. 1/2 cup finely chopped onion & 1/2 cup chopped green pepper.
5. 1 pound uncooked ground beef.
6. Sprinkle with salt & pepper. Add another can of (small can, 8 ounces) tomato sauce and 1/2 cup water.
7. Cover all with strips of bacon, cut in half.
Cover and bake in 350 degree oven at least 1 hour. Uncover and bake 30 more minutes, until bacon is crisp.
