Temphe is molded soybeans

I love temphe! Who needs meat when you have this delisious chicken like substitute! Soybeans are ground slightly and innoculated with a spore and allowed to mold for a few days. It forms a solid white mass and smells like freash mushrooms when done. Can be frooze or put in fridge for a few days. I use to make my own because after making my soymilk to make my own tofu, you are left with the ground bean pulp perfect for temphe!!!! Very good for you, too.
