Please re-think your plan of doing this yourself. I've done many, many parties, weddings, etc. If money is not a problem, a professional caterer does ALL the work! I don't want you to regret afterward - hindsight is 20/20. When doing the work yourself you have to remember and take care of every detail even if it's just delegating it. Plus a variety of people making different dishes has the potential to look like a church pot-luck. Caters also do food "styling" - they make it look good and appetizing on the table. You could have a few things catered, then have large cookie trays made up from friends and yours, contributions. Even specialty dips and appetizers could be your own, but for the "main meal" if you do go forward on your own, just be careful it looks good, goes together, and all the little details are taken care of. The table needs poufing, things set on different heights and garnished!
