Try this recipe "Governor's sauce"...good on burgers with Mayo too!

I found this in an old Farm Journal Cookbook... This is good, but with the full 6 cups sugar, too sweet for me... try less sugar if you don't want so sweet a relish.
I think I might simmer longer with the spices also...

Governor's Sauce

14 pounds tomatoes, slightly ripe
1/2 cup salt
1 pounds cabbage
6 large red apples, unpeeled but cored
6 large sweet peppers, red -- (about 8 oz. or less each)
4 large sweet peppers, green -- (about 8 oz. or less each)
1 pound jalapeno peppers -- (or less, add sweet peppers to make up for loss of jalapenos)
6 cups sugar or less -- (4-6 cups is ok)
1 quart vinegar, commercial -- (commercial apple vinegar ok)
1 1/2 oz prepared pickling spices.

Grind tomatoes; cover with 1/4 cup salt. Let stand 3 hours. Drain.

Coarsely grind cabbage, apples, peppers and jalapenos. If you choose to not use the jalapenos, replace with an equal measure of sweet red peppers to maintain volume. Add all the ground vegetables to the tomatoes.

Ad the last 1/4 cup salt, sugar, vinegar and pickling spices tied in a cheese clothe or other clean, thin, white cloth. Cook for 30 minutes; remove spices. Let stand overnight. Reheat to boiling point.

Pour at once into hot jars; adjust lids at once. Process in boiling water bath 10 minutes. Remove jars from canner and complete seals unless closures are the self sealing type. Makes about 12 pints.
