I copied this post from "What's for DInner" to update and thank you here at "Ethnic". As you can see, I was covering all my posts!

OK, project over. I have instructed my family that the next time I see plum tomatoes and get the bright idea of making sauce, just shoot me!!

This was indeed a project and the work involved to get the same sauce I get when I make sauce using two 28oz. cans of Contadina and 1 Contadina tomato paste is ludicrous. Nevertheless, I made the sauce and it yielded 6 pints.

You have to scald these things first, take the skin off, squeeze the seeds out, and then chop them. Contadina does all that for me, aren't they nice! My kitchen looked like a factory, my blouse looked like I had just stepped out of one of those wacky "I Love Lucy" episodes, all for 6 pints...go figure.

So, in the upcoming weeks I will find ways of using this sauce and feeling satisfied at the outcome. And to think, at first I wanted to turn them into sun-dried tomatoes filling jars with olive oil and spices....

My sincerest "Thank You" to all who contributed to my lunacy...I have copies each and every one of your recipes and they are in the recipe box as we speak.
