What you want is Mrs Beeton's Book of Household Management, originally printed in the mid to late 1800s, but now available in facsimile copy - either buy it (it's fairly cheap) or a decent library should have it. Not only to you get full menus and recipes there is a whole bunch of information about setting the table, presenting the food, organising the servants....
