QUICK AND EASY MARYLAND FRIED FISH
1/2 pound pan-dressed fish OR 1/3 pound fish fillets, per person
Salt, for sprinkling
Lemon and pepper seasoning, for sprinkling
1 to 2 cups dry pancake mix
Fat or oil, for frying
Cocktail or tartar sauce (for serving)
Wash and dry fish. Dip fish into clean, cool water, sprinkle lightly with salt and lemon and pepper seasoning; then coat lightly with pancake mix.
Fry in deep fat* at 350 degrees F for 4 to 5 minutes, or fry in 1 1/2 inches hot fat in fry pan, 4 to 5 minutes on each side. (Fish is done when browned on both sides and flakes easily when tested with a fork. Be careful not to overcook.)
Remove fish from pan and drain on paper towel. Serve with cocktail or tartar sauce.
*If desired, fish may be pan-fried over medium to low heat, in just enough fat or oil to keep from sticking, until done as described above.
