Burton's Cafe is located in Whittington Illinois, not Benton. I lived in that area for many years and their unique white pie would draw customers to the cafe from hubdreds of miles away. The heat from the pudding helps set the egg whites when folded into the mixture. Enjoy!!
TASTES LIKE BURTON'S CAFE WHITE PIE
1/2 cup flour
2 Tbsp. cornstarch
3/4 cup sugar
2 cups milk
Mix with whisk until smooth and cook until thickened. Add 1 tsp. clear vanilla. Cool slightly.
In separate bowl: Beat together until stiff peaks form:
2 egg whites (pasteurized)
1/4 cup sugar
pinch of salt
Gradually add cooked pudding mixture into last mixture until blended. Pour into a 9 inch crust and refrigerate.
Spread top of pie with real whipped cream and chopped pecans before serving.
