Violet Jelly

I make a similar jelly out of violet blossoms. It has a wonderful flavor and looks like a little jewel on a plate of muffins or scones. I love to put in little chrystal cut jelly glasses and give it as gifts.

Violet Jelly

1 quart violet blossoms
boiling water
juice of one lemon
l 3/4 oz pkg fruit pectin
4 C. sugar
1/2 tsp margarine or butter

Fill a quart jar with violet blossoms and cover with boiling water. Steep 24 hrs and strain.
Use two cups of this strained liquid, add the juice of one lemon and the fruit pectin, bring to a boil. Add sugar and margarine (the margarine will keep it from boiling over and eliminate foaming on top) Bring to a full rolling boil and boil for 1 minute. Ladle into sterilized jars and seal with praffin or freeze.
Makes 5 cups
