Recipe: Eddie Martini's Bacon Brussels Sprouts

EDDIE MARTINI'S BACON BRUSSELS SPROUTS

1/4 cup (1/2 stick) butter
1 pound fresh brussels sprouts, sliced thin into shreds
1 cup finely diced red bell pepper
1/2 cup cooked bacon, crumbled

In large saute pan, melt butter over medium-high heat. Add brussels sprouts and red pepper. Saute just until tender, about 10 minutes, stirring occasionally.

Add bacon and cook 2 to 3 minutes or until heated through.

Makes 4 servings
