Is this going to be a buffet style meal or a sit down dinner. If it is buffet style, what about a Jambalaya, it can be made with seafood (more costly) or as I make often for a large crowd chicken and sausage. It can be made and popped in the oven and heated or on the day of mix all ingredients, put in the oven and bake. It does not take a lot of prep or watching and it can be made rather inexpensively.
