Recipe: Baby Food Cake with Cream Cheese Frosting

BABY FOOD CAKE WITH CREAM CHEESE FROSTING

FOR THE CAKE:
3 eggs
2 cups sugar
1 1/4 cups salad oil
1 jar applesauce baby food
1 jar apricot baby food
1 jar carrot baby food
2 cups flour
2 teaspoons ground cinnamon
2 teaspoons baking soda
1 cup chopped pecans
FOR THE FROSTING:
1 (8 oz.) package cream cheese, softened
1/2 cup margarine, softened
1 (16 oz.) box powdered sugar
1 teaspoon vanilla

TO MAKE THE CAKE:
Preheat oven to 350 degrees F. Lightly grease a 13x9-inch baking pan.

Combine eggs, sugar and salad oil. Add baby food; set aside.

Sift flour, cinnamon and baking soda together and add to baby food mixture. Mix in pecans. Place in prepared pan.

Bake at 350 degrees F for 35 minutes. Cool in pan on wire rack before frosting.

TO MAKE THE FROSTING:
Combine cream cheese, margarine, powdered sugar and vanilla.

Frost cake when cool.
