Recipe: Corn Relish

This may not be what you are after, but thought I'd post it anyway. I have not tried it - I am allergic to corn!

12 ears corn
1 small head of cabbage
4 med onions, peeled
3 sweet red peppers, seeded
3 tbsp salt
3 tbsp flour
1 tsp tumeric powder
2 c sugar
1 tbsp mustard
1 qt. vinegar

cook corn on cob just enought to 'set' milk (about 3 min); cut from cob
put cabbage, onions and peppers through food chopper, using coarse blades. combine all vegetables
blend salt, flour, tumeric, sugar and mustard; add vinegar gradually. bring to boil and add vegetables.
simmer 25 to 30 min.
seal at once in hot sterilized jars. makes about 8 pints.

this is from a 1959 cookbook.
