Sweet and Sour Chicken Balls

SWEET AND SOUR CHICKEN BALLS

2 c. boneless cubed chicken
2 eggs, slightly beaten
1/4 c. flour
1 tsp. salt
1/2 c. oil
1 c. water
2 chicken bouillon cubes
1/2 c. white sugar
3 Tbsp. soy sauce
1/3 c. vinegar or lemon juice
3 Tbsp. cornstarch mixed with
a little water
1 (9 oz.) can pineapple chunks
(reserve syrup)

Combine eggs, flour and salt. Dip chicken pieces in egg
mixture and brown in oil in large baking skillet. As meat
browns, transfer to shallow baking pan. To skillet, add
chicken broth, sugar, soy sauce, vinegar, syrup drained from
pineapple and cornstarch mixture. Cook until thickened,
stirring constantly. Pour over chicken. Bake in moderate oven
at 350 degrees for 40 minutes. Arrange pineapple over top. Return to
oven for 5 minutes. Serve over rice.
