Good afternoon to you. I had this recipe in my files...It is a recipe that is very very hard to get.
Laurie it's formal name is
HORN & HARDART'S PHILLY-STYLE BAKED BEANS
1 pound dried beans (either navy or great northern dried)
1 1/2 cups tomato juice
1 cup of water (add more as needed)
2/3 cup molasses
1/2 cup fine chopped onions
4 tbsp ketchup
4 tbsp brown sugar
4 slices bacon (fried crisp and diced)
2 tbsp cider vinegar (or distilled will work as well)
1 tbsp dry mustard.
1/2 tsp cayenne pepper
Soak beans overnight in a large pot.
The next day, drain beans. Cover with fresh water and bring to a boil. Reduce heat to a simmer and cook, uncovered, till almost tender.
Drain beans and transfer to a oven-safe casserole dish or baking pot coated with cooking spray or brushed with oil.
Combine the remaining ingredients... then stir into beans.
Bake, uncovered in a pre-heated 250 degree oven till very tender, about 3 to 4 hours. (Start checking the beans after 2 to 2 1/2 hours, adding water as needed to prevent scorching.
MAKES ABOUT 8 SERVINGS.
