fruit basket idea

You've got some great ideas already, but here are a few more, besides the melon chunks and seedless grapes:

blueberries (or other firm-skinned berries in season; strawberries do not work well)
pineapple chunks
canned peaches (won't discolor but might offend snobs)
papaya chunks
mango chunks
coconut shreds
pitted cherries

I've never made a watermelon basket, but I've eaten quite a few! The key to successful presentation is to make sure the colors are balanced--equal amounts of red, green, orange, yellow, and/or purple. Or go monochromatic with just a sprinkling of accent color.
