Recipe: Sweet and Sour Tongue (using tomato paste and raisins)

SWEET AND SOUR TONGUE

3 to 4 lb. tongue
water
2 tbsp. white granulated sugar
1 medium onion, chopped
1 cup sweet wine
1 (6 oz.) can tomato paste
1/2 cup raisins
2 tbsp. vinegar
1/3 cup light brown sugar

Place tongue in boiling water to cover, boil for 1 hour, drain. Fill pot with cold water and let stand for about 5 minutes. Remove and skin tongue. Slice when cold and set aside.

In large frying pan or sauce pot, put onion with white sugar. Cook until it becomes a soft brown texture (caramelized). Add wine, tomato paste, and raisins.

Place sliced tongue in sauce and cook for 30 minutes in covered pot.

Add vinegar and brown sugar. Cook about 15 minutes longer.
