ISO: How do you make soft cookies?

Hello everyone. I'd like to know if someone can tell me how you bake oatmeal or chocolate chip cookies so that they don't get hard. I like them soft. Someone mentioned adding alot of salt but that did'nt sound right to me. Could be wrong though. Anyways, I baked hundreds of cookies this Christmas and shipped some off for the holidays. Hated the thought of my friends receiving them and saying they were good but very hard. Can anyone help? Thanks so much and also feel free to email or post here. Merry Christmas
