Dear Hana: Skillets are widely used

in Spanish and Latin countries. Here in Puerto Rico, my generation (the 1960th)was born with a skillet in our hands. But that was before modern healthy cooking. We used a lot of shortening and later oil. Now we have adopted healthy habits and we use the skillet in most cases with just one or two tablespoons of extra virgin olive oil. We use now our skillets more like a wok, but sometimes we prepare greasy appetizers or fried chicken (chicharrones de pollo), empanadas or chorizo slices, morcillitas and many other typical delicacies that according to our taste are deep fried. By all means, try some wok recipes in your skillet and after a while you will be comfortable with its use. Be sure to get a perfect cover for it, because sometimes you can even use it as a Paella pan. Let me know if I just confused you more and if you want some specific recipes.
