Raisin Bread Ginger Sandwiches (using cream cheese, pineapple and pecans)

RAISIN BREAD GINGER SANDWICHES

2 loaves raisin bread
Mayonnaise
2 pkg. (3 oz. each) cream cheese, room temperature
1/2 cup chopped pecans
4 tbsp. orange marmalade or crushed pineapple
2 tbsp. finely chopped candied ginger
1 tbsp. cream

Spread raisin bread with mayonnaise.

Combine remaining ingredients and spread between 2 slices of raisin bread. Trim crust off and cut sandwiches in desired shapes.

Fills 2 loaves of bread, 22 sandwiches
Hi Margaret,

Here is a recipe that fits your description, but I don't know if this really makes enough filling for 22 sandwiches.
