Recipe: Giardiniera (Pickled Vegetables)

Appetizers and Snacks
GIARDINIERA (PICKLED VEGETABLES)

2 cups cauliflower, cut into small chunks
2 carrots, peeled and sliced diagonally
1 celery stalk, sliced diagonally
1/2 red bell pepper, quartered and sliced
1 green onion, sliced
1 clove garlic, sliced
1 cup white vinegar
1/2 cup dry white wine
1/4 cup apple juice
1/4 cup water
2 tsp salt (omit for low-sodium diets)
8 peppercorns
1 tsp dried dill weed

Mix all the ingredients and refrigerate in a closed jar for two days.

Servings: 6
