Recipe: Mock Sourdough Bread (bread machine)

MOCK SOURDOUGH BREAD

"Cynthia Thomas of Milton requested an easy sourdough bread machine recipe. By adding yogurt and vinegar, you can give your bread a sourdough tang without having to make a sourdough starter. Drain any accumulated liquid from yogurt before measuring. As bread machines differ, adjust ingredients to suit your machine."

1 cup low-fat plain yogurt
1/3 cup water
2 tsp vinegar
3/4 tsp salt
2 tsp granulated sugar
3 cups all-purpose or white bread flour
1 1/4 tsp bread machine yeast

Spray bread machine pan with cooking oil. Add all ingredients to bread machine according to manufacturer's directions. Select French or basic white cycle.

VARIATION:
To make a crusty oven-baked loaf, select dough cycle. When completed, remove dough to lightly floured surface. Cover and let rest 5 to 10 minutes.

Roll into a rectangle, then roll up jelly roll style, sealing edges and ends. Place on lightly greased or parchment paper-lined baking sheet or perforated pizza pan. Cover and let rise in a warm place until doubled in size, 30 to 40 minutes.

Preheat oven to 400 degrees F.

Slash loaves diagonally 5 or 6 times with sharp knife and brush with cold water.

Bake 20 to 25 minutes or until crust is golden brown and loaf sounds hollow when tapped. (Or an instant-read thermometer inserted in center reads 200 degrees F).

For a crisper crust, spray or brush loaves with cold water 2 or 3 times during baking.

Makes one (1 1/2-pound) loaf
