Recipe(tried): Shoney's Cheesy Cheddar Chowder (copycat recipe)

SHONEY'S CHEESY CHEDDAR CHOWDER
(copycat recipe)

Many years ago, Veg-All (Allen's canning co.) had a very similar recipe on the back of the Veg-All can. Veg-All is a brand name of mixed vegetables containing corn, peas, celery, potatoes, carrots, beans, etc. Any brand will work.

1/3 cup flour
1/4 cup butter or margarine
2 cups milk
1 (14 1/2 oz.) can chicken broth
1/4 cup chopped onion
2 cups shredded cheddar or Velveeta cheese
1 (16 oz.) can Veg-All mixed vegetables

Melt butter; whisk in flour. Whisk in milk and chicken broth. Cook on medium heat, stirring until thickened.

Add cheese and stir until melted. Add mixed vegetables and cook until hot.

VARIATION:
Shoney's also has a broccoli-cauliflower soup in which brocoli and cauliflower (a 10-12 oz frozen package) is used in place of the canned mixed vegetables (cooked carrots, potato, and onion may be added).
