Recipe(tried): Autumn Squash Soup

I have been making and freezing soups all day and I came up with this one. What a winner! It has a subtle sweetness to it, from the squash, I guess. I don't know how many it will feed but I just ate 3 bowls! I just had to share!

AUTUMN SQUASH SOUP

3 tbsp. butter
1 tbsp. olive oil
3 medium yellow onions, chopped
2 large carrots, halved lengthwise and sliced
3 garlic cloves, crushed
4 cups butternut squash, peeled and cubed
4 cups turkey or chicken broth (i used my own turkey broth)
3/4 tsp. salt
1/4 tsp. fresh ground black pepper
1/4 to 1/2 tsp. ground nutmeg (measured in my hand)
1/2 to 3/4 tsp. ground ginger

Put butter and olive oil in large pot on medium heat to melt the butter. Add onions, carrots and garlic. Stir and cook until onions are soft but not brown.

Add squash, broth, salt, pepper, nutmeg and ginger. Stir. Cook on medium low for 30 minutes or until squash is very soft.

Puree in blender in batches and ladle into bowls. Garnish as you wish.
