Recipe: Sour Cream Raisin Bars

SOUR CREAM RAISIN BARS

2 cups raisins (boiled, drained, and cooled)
FOR THE CRUST:
1 cup brown sugar
1 cup butter or margarine
1 3/4 cups flour
1 tsp baking soda
1 3/4 cups quick-cooking oats (uncooked)
FOR THE FILLING:
3 egg yolks
1 1/2 cups sour cream
1 cup sugar
2 1/2 tsps cornstarch
1 tsp vanilla

Place raisins in a saucepan and cover with water. Bring to a boil. Remove pan from heat, drain raisins and set aside to cool.

Preheat oven to 350 degrees F

TO PREPARE THE CRUST MIXTURE:
Cream together brown sugar and butter. Mix in flour, baking soda and oats. Pat half of mixture in the bottom of a 9 x 13-inch baking pan.

Bake for 7 minutes.

TO PREPARE THE FILLING:
Combine egg yolks, sour cream, sugar and cornstarch in a saucepan. Boil until thick. Stir in cooled raisins and vanilla.

Spread filling over baked crust. Crumble remaining cookie mixture over top.

Bake for 30 minutes. Cool. Cut into bars.

Makes 2 dozen
