PINEAPPLE PASTA
3 1/3 cups flour
1/2 tsp salt
2 egg; beaten
1 (6 oz) can pineapple juice concentrate
1 tsp olive oil
In a mixing bowl, stir together 3 cups of the flour and salt.
Combine eggs, pineapple juice concentrate, and oil; add to flour. Mix well.
Sprinkle kneading surface with the remaining 1/3 cup flour. Knead for 10 minutes, cover and let rest for 10 minutes.
Roll out and cut into desired shapes. Cook in boiling salted water.
Makes 1 1/2 pounds
