Recipe(tried): Jackie, your roast idea sounds good or...

You may have a good recipe for your roast, I don't cook them that often myself but you could also do
(1) chicken mignon (so tender & good) just do a search TKL by the name & look for my previous post or
(2) stuffed pork chops:I brown them in a little olive oil after coating lightly with flour,salt, and pepper - then I use Pepperidge Farm herb stuffing mix and a can of chicken broth, some chopped celery & sage added
Just stand the chops up and put stuffing on each side to prop them up and bake at about 350 degrees for about 45 min. or so depending on how big they are.

I posted a good yeast hot roll recipe on the board for bakers recently too (easy & good)
You need a salad maybe a pasta salad or 7 layer.
Broccoli Rice Casserole would be really good to go with everything too.
