Recipe: Broccoli Royale and Broccoli Cheese Casserole (with Ritz cracker crumb crust)

32 Ritz crackers, crushed
1/4 cup melted butter
1 (16 oz.) pkg. frozen broccoli cuts, cooked and drained
12 to 16 oz. processed cheese, sliced or shredded
Mix crackers with butter and set aside. Reserve 1/2 cup.
Butter an 8x8 inch or 11x7 inch glass pan and press layer of crumbs in bottom. Spread broccoli over crust. Spread shredded or sliced cheese over top of broccoli and sprinkle remaining crumbs on top.
Bake at 350 degrees F for 30 minutes.
BROCCOLI CHEESE CASSEROLE
48 Ritz crackers, crushed
2/3 cup butter or margarine, melted
1 bunch fresh broccoli, cleaned, cut in small pieces and steamed until tender
1 cup fresh mushrooms, sliced and cooked
1 (8 oz.) Velveeta cheese, thinly sliced
1/4 cup milk
Whole Ritz crackers, to cover top
Mix cracker crumbs with melted butter. Use mixture to form crust in bottom of 9 x 2 inch casserole.
Place broccoli on crust; then layer mushrooms and then cheese slices on top. Pour milk over cheese. Put whole crackers on top.
Bake at 350 degrees F for 15 minutes until cheese is melted. Serve warm.
Makes 6 servings
