Recipe: Fork Cookies (using lemon extract and ginger, 1950's)

FORK COOKIES


2 cups brown sugar
1 cup shortening, melted
2 eggs
2 teaspoons baking soda
2 teaspoons cream of tartar
1 teaspoon ground ginger
1 teaspoon lemon extract
1 teaspoon vanilla extract
3 cups flour

Mix together brown sugar, shortening (room temperature) and eggs. Mix in remaining ingredients. Make into small balls and place on ungreased baking sheets. Flatten with a fork dipped in flour.

Bake at 350 degrees F for 10 to 12 minutes.
